The umeboshi vinegar is obtained by filtering the salty vinegar extracted from the maturation of the umeboshi. It is used like a normal vinegar, which when salted, allows a salad to be finished by adding just a little bit of this vinegar. It can also be used in vegetable sauces by adding one tablespoon of Tahin, two tablespoons of umeboshi vinegar and mixing well.
