Kuzu, Pueraria mo lobata is a species of flowering plants in the Fabaceae family. It is one of the 50 fundamental herbs used in traditional Chinese medicine. Among its properties is that of being an intestinal regulator and regenerator of the flora. Dilute a tablespoon of Kuzu in a cup of cold water, bring to the boil and, stirring constantly, cook for 1 to 2 minutes. It is also used as a gelling agent in soups, sauces and desserts.
